What the piece actually does

  • Two pieces that work together

    A deep ice chamber below, an elevated serving tray above. The tray lifts the seafood clear of the meltwater while the chamber does the cooling, which is why the bed lasts a party rather than half an hour.

  • An integrated centre well

    The serving tray is pressed with a recessed centre for cocktail sauce, so the sauce travels with the piece and sits above the ice rather than in it. Nothing extra to wash, nothing to lose.

  • 304 stainless steel throughout

    Not plated, not coated. 304 holds and distributes cold far better than glass or ceramic, which is why a properly built bed lasts the length of a party rather than half an hour.

  • Built for a crowd

    Holds a full pound of 16/20 count shrimp in a single ring over crushed ice. That is four to five shrimp each for twelve people, without a heap that nobody can take from cleanly.

  • Not only for shrimp

    Oysters on the half shell, ceviche, crab claws, chilled asparagus, caviar service, or watermelon with feta and mint in high summer. The same bed works for all of it.

Using it

Build the bed properly and it holds ninety minutes

Crushed ice, not cubes. Fill to just below the rim and press it flat. Then chill the assembled piece, empty, for ten minutes before the shrimp go on. Cooling the metal first is the step almost everyone skips and it is worth roughly an extra hour of service.

Care

Looking after it

  • Wash by hand in hot soapy water before first use and dry with a soft towel.
  • Rinse promptly after every use. Acids and oils left standing will dull the finish.
  • Dishwasher safe, though hand washing preserves the mirror finish considerably longer.
  • Never use steel wool or abrasive cleaners.
  • Do not cut or stir directly against the surface.
  • Dry fully before storing. Stainless will not rust, but standing water leaves mineral spots.
