Shrimp cocktail for Christmas Eve

Three arrangements, a timing plan that survives a full kitchen, and how to make the tray look like it took longer than it did.

The case for shrimp cocktail on Christmas Eve is not that it is festive. It is that it needs no oven, no burner in the final hour, and no attention once it is on the table, on the single evening of the year when all three of those are in short supply.

It is also the only cold, sharp, clean thing on a table of rich food, which is why it always empties first.

How much, for a holiday table

Increase your normal quantities. Shrimp go roughly one and a half times faster at a holiday buffet than at an ordinary party, because everything else is heavy and people keep returning to the one thing that is not.

Three arrangements

The ring

Tails outward, backs curled up, in a single continuous ring. Clean, formal, and the easiest to eat from because every shrimp is reachable and taking one disturbs nothing.

This is the arrangement to use if you want the tray to look considered rather than casual. It also holds its shape as it empties, which a heap does not.

The overlapping fan

Shrimp laid in overlapping rows like roof tiles, working from the outside in. Denser than a ring, so it fits more on the same tray, and it photographs well.

The trade-off is that the arrangement degrades once people start taking from it. Best for a tray that will be finished quickly or refreshed.

The half and half

Shrimp on one side, something contrasting on the other. Chilled crab claws, cooked mussels on the half shell, or cold smoked salmon rolled into loose curls. Two sauces at the centre.

This is the arrangement for a table where the cold course is doing real work rather than acting as an opener.

Garnish, restrained

Lemon wedges, cut into sixths rather than quarters so they fit the hand. A few sprigs of dill or flat parsley pressed into the ice, not scattered on the shrimp.

That is the whole list. Shrimp cocktail is not a dish that improves with decoration, and anything sitting on top of the shrimp has to be moved before anyone can eat.

Skip the shredded lettuce. It was there in the 1970s to fill a coupe glass and it does nothing on a modern tray except absorb meltwater and go grey.

The timing plan

The point of this dish on Christmas Eve is that all of it happens before the difficult part of the day.

Working backwards from service

  1. Two days aheadBuy frozen 16/20 shrimp. Buy horseradish and lemons.
  2. The night beforeShrimp from freezer to refrigerator. Twelve hours to thaw properly.
  3. Morning ofMake both sauces. They improve for several hours. Refrigerate.
  4. Early afternoonPeel, poach, shock, dry. Into a covered container on paper towel. This is the last hot-stove step and it takes twenty minutes.
  5. One hour aheadBuy or bag ice. Build the bed and pre-chill the assembled piece for ten minutes.
  6. Fifteen minutes aheadPlate the shrimp, add the sauce bowls, cut the lemons.

Nothing on that list competes with the oven, and nothing after early afternoon takes more than a few minutes.

Keeping it alive through a long evening

Christmas Eve runs longer than an ordinary party. A single tray asked to cover three hours will be tired well before the end.

Build two, put one out and hold the second fully assembled in the refrigerator. Swap when the first is two thirds gone. More on holding a tray cold.
